andrew and i were introduced to tacos al pastor {spiced pork + pineapple} here in kansas city about two years ago and we haven't looked back since. we didn't even know such a delight even existed truth be told! boring old us usually ordered plain jane beef tacos when out for mexican food, and sometimes, we even got steak fajitas if we wanted to kick it up a notch. dear heavens, did i just quote emeril? ew.
here is my homemade version of tacos al pastor made in the slow cooker. it calls for simple ingredients and time. time, that is, spent away from the kitchen and doing whatever it is you need to do! it's a pretty perfect meal if you are busy and need a little help getting supper on the table.
put all of these ingredients into the slow cooker:
2 pounds pork butt {i like the boston kind}
½ pineapple, sliced and cut into 1-inch pieces
1 large white onion, 1/4-inch dice
4 cloves garlic, minced
then blend these 7 ingredients and top off the pork in your slow cooker:
1 32 oz can diced tomatoes in juice
½ cup orange juice
2 jalapeno peppers, diced
4 chipotle chilies (in adobo sauce)
2 teaspoons cumin
1 ½ teaspoons mexican oregano
sea salt
½ pineapple, sliced and cut into 1-inch pieces
1 large white onion, 1/4-inch dice
4 cloves garlic, minced
then blend these 7 ingredients and top off the pork in your slow cooker:

cook on low for 6ish hours. go shopping, read a book, have a cuddle. then cut up the juicy pork and then top with white onion, cilantro, and fresh lime juice. you must, and i mean must, use corn tortillas for these tacos, not flour! it will make a world of a difference.

I have never heard of this taco method before! it looks delicious, and would definitely be a change from the plain ol' boring ones.
