a recipe // coconut milk chia seed pudding with honey poached fruit
chia seeds. you heard of them? they are tiny little black seeds packed with nutrients. they plump up when put in liquid and take on the form of something related to tapioca. when i found out my husband was going to work late i figured what the heck. i am going to make puddin' for supper. i had some fruit that was starting to turn, so it only made sense to poach it in iowa honey. so that's what i did. it was magical.
ingredients for the pudding:
1/4 cup chia seeds
1/2 cup of almond milk
1 cup of coconut milk
to prepare, mix all above ingredients in a pretty bowl and let refrigerate for at least 3 hours. top with poached fruit before devouring.
ingredients for the fruity topping:
1 really ripe peach
1 small handful of your favorite berry
a generous drizzle of honey
1 tablespoon of raw sugar or stevia
to prepare, put all ingredients in a small sauce pan on low to medium heat for about 30 minutes. every now and then, use a wooden spoon to break down the fruit and stir the juices. if you feel like your fruit is getting too thick, add a little water.
that's all there is to it, you guys!
*we got our chia seeds at trader joes for something like five dollars. i recommend getting them there, along with everything else you could ever want or need. ;)

We are big chia seeds eaters in our family! Big coconut oil/milk lovers too, so will be trying this out later this evening!
