a recipe // grapefruit salsa


what you see above is grapefruit salsa and it is pretty wonderful.  a few nights back i made some salmon and was thinking it needed to be freshened up a bit.  we are kind of in spring mode when it comes to our meals lately.  what this fish dish needed was a little somethin' somethin' and this citrus topping took our dinner over the top.  it made my husband drool.  it made me lick my plate.  and the best part about grapefruit salsa is that it makes a delightful condiment for a wide variety of foods, like pork chops, or any grilled meat come to think of it, on spicy tacos, in a sour cream based dip, plain with a cracker, as a soup garnish.  or just on a spoon by itself if you really want.  the list is endless.

ingredients: 

1 ruby red grapefruit segmented and roughly chopped
1/2 can of chopped mandarin oranges
1 handful of cherry tomatoes sliced in two
half of a red onion or shallot miced
1 large handful of cilantro chopped
1 small handful of mint chopped
half of a jalapeño minced 
1 tablespoon of cumin
2 tablespoons of orange juice
2 table spoons of olive oil
1 tablespoon of rice wine or red wine vinegar 
salt and pepper to taste 

to prepare mix all the above ingredients into a big bowl and let marinate in the fridge for a few hours.  then you can create something wonderful for dinner and put this salsa on top.
