a recipe // roasted veggie tacos
every now and then, i have one of those nights where i have the framework for a good meal, but have to get a smidgen creative with the fixins. we always have black beans in our pantry and corn tortillas in our fridge. always. so i started with that and went from there to make these roasted veggie tacos. they just happened to be quite the hit!
taco ingredients:
corn tortillas
3 large sweet potatoes
1 pepper
1 onion
a bundle of mushrooms
1 can of black beans
to prepare your tacos, simply roast your veggies to your desired liking. i usually bake them in a super hot oven, say 425 degrees or so. cut them the same size in small quarter size cubes. put your veggies in a roasting pan and drizzle with good olive oil, salt and pepper. make sure they are not crowding each other; you want them to roast, not steam. bake for 20 minutes, turn, and then bake for another 20. keep an eye on them so they do not burn. every oven is different! but it's seriously that easy.
jalapeno lime cream to top:
1/2ish cup of plain greek yogurt
1 finely diced jalapeno with no seeds
juice of 1 lime
a dash or five of your favorite hot sauce (we love valentina)
salt and pepper
mix all the above ingredients together and top your veggie tacos! this cream is super flavorful and healthy, so no need to be stingy, now.

Tacos are our go to favourites! And I love how they are so versatile and everything tastes better in a corn tortilla. Will be trying this combo in the near future.
