a recipe // deconstructed chicken pot pie

the weather man said to get ready for some blustery weather, icy roads and a few inches of snow. translation...let's make some chicken pot pie! comfort food, here we come.



deconstructed chicken pot pie

-saute some chopped onion, leeks, carrots, fennel, celery and garlic in a lot of butter with salt and pepper
-after these veggies are tender, put this tasty mixture in another bowl and add some finely chopped flat leaf parsley, one can of cream of mushroom soup, one 1/2 cup of cream, one 1/2 cup of chicken broth and 1 cup of frozen peas. Mix this well.
-in the same saute pan, add cubed chicken seasoned with salt and pepper. Brown the meat but be careful to not over cook it. When browned, add the chicken to the veggie mixture.
-for the topping: cut up four slices of sourdough bread. To the cubes of bread, add one cup of freshly grated asiago cheese and drizzle with good olive oil.
-put the pot pie mixture in a baking dish and top with the cheesy bread cubes. "no crust?" say you...trust me. this version rocks.
-bake @ 350 degrees for 30 minutes
-eat & enjoy!
